I made this for dinner tonight. It is baking in the oven right now. I'm not going to write an ingredient list because this recipe can be made anyway you like it.
Tonight I am using Ground Beef. You can use ground beef or ground turkey or ground pork...or mix them all together. I usually mix ground pork and ground beef but tonight I just had the beef.
I mix the beef like I am going to make a meatloaf. However you make your meatloaf, you just mix it that way. I put bread crumbs, 2 eggs, grated parmesan cheese and spices.
On the side in a frying pan, I fried up some cut up green bell peppers, onion, garlic, tomato...(and of course I put my very favorite chili garlic sauce) . I cut up broccoli in small pieces and added that to the mixture while it was frying. If I had it I would have rather put in spinach but I didn't have it tonight. Like I said, you can put in whatever you like. Just make a stir fry out of whatever vegetables you want.
Then, on the side I grated some cheese. I just looked at what I had in the frig. I grated some cheedar cheese, some white sharp cheddar and I added some grated mozzorella.
Take aluminum foil and lay out a big piece. Then, smear a little oil on it to keep the meat from sticking. I took the ground beef mixture and pressed it all out onto the sheet of aluminum foil in a rectangle shape leaving about an inch all of the way around of the foil.
Then spread your grated cheese all over the meat and then add the vegetable mixture on top of that. Kind of like you are making a pizza.
Pick up one end of your foil and start rolling the meat and toppings into a big roll. I like the pinch the ends of the meat together after it's rolled up so that the stuffing doesn't fall out.
I smeared ketchup all over the top and sides of the meat.
Put it in a pan and cover with foil.
Bake at 350 for at least an hour. Take off the foil and bake a while longer to brown the top a little.
